It didn’t take that much time for me to decided where I would like to begin with. As a start I wanted to show you a recipe that is really delicious and yet in the same time quite easy to do, so that even the most timid ones out of you would decide to give it a try. Quite often my friends ask me:’ Hey, Lora! How exactly did you made that?’ and I always begin with:’ It’s really simple, let me explain it to you…’
And it truly is like that. I’ve noticed in time that most people consider baking to be an extremely difficult adventure. And yes, it is an adventure but not a difficult one. I believe that all recipes are doable and that there are basics if being followed they will guarantee great results.
And now let’s get down to business. This recipe is good for many occasions. It doesn’t take a lot of time and it is easy. In addition to the ingredients, the things that I used to help me with it were a round cake pan with removable bottom or an adjustable stainless-steel cake ring, which usually is my choice. I prefer the ring because you can choose the dimensions depending on the size when it comes to number of people or quantity of the products you want to use. My ring is adjustable between 16 and 30 cantimeters. I also have it in square/rectangle shape but I will explain about it in a different post. Besides this I’ve also used a chopper, mixer and a blender.
Here are all the ingredients for the recipe:
For the base:
- 100 gr. butter biscuits
- 45 gr. butter
For the cheesecake mix:
- 400 gr. cream cheese
- 500 gr. yogurt
- 100 ml. liquid whipping cream
- powdered sugar
- 1 tsp gelatin
- 240 gr. fresh blueberries ( plus another 100 gr. for decoration )
We begin with the base. You need to crush the biscuits until very fine crumbs form. To help me with that I normally use my chopper but if you don’t have one or maybe yours is broken you can always do that with a plastic bag and a rolling pin. Meanwhile melt the butter and then mix the two ingredients together until they are well combined. Press flat the crumb mixture into a 20 cm pan. To do that you can either use your hands or a spoon. Chill crust for about 30 minutes in the fridge.
About 10 minutes before the base is ready we need to begin with the cheesecake mixture. Mix the gelatine with 1 tbsp of cold water and then melt it. I normally use the microwave oven in this situation regardless of the fact that many recipes will suggest that you need to use a water bath. But if I have to be completely honest with you, guys, I’ve never had the time to do it, nor the patience. And yes, if you get distracted even for a second, the gelatine will overheat and it will not be suitable for use any more. Been there, done that. So I would recommend that you have a few more gelatines at home just in case. You need to set it aside so it can cool down a bit before adding it to the rest of the ingredients. In the meantime mix in a large bowl the cream cheese, the yogurt and the liquid whipping cream. Add as much powdered sugar as per your own taste and finish with the vanilla and then the gelatine.
From here on now you have two options. If you are in a hurry and your guests are almost knocking at your door then you need to finish this as soon as possible. To do that, just add all 240 gr. of fresh blueberries to the mix and blend it very well. However if you do have a bit more time left to go then I will tell you what I did. I separated the mix into 3 even parts. To the first one I added 160 gr. of blueberries, to the second – the rest 80 gr. of the blueberries and the third one I left as it is. Again we need to blend very well the blueberries. Then at the end I started pouring the mix from the darkest color to the white one. Once you do that you are ready…well almost. Leave the dessert in the fridge for another hour.
You need to carefully remove the pan from the cheesecake and then treat yourself with some creativity time deciding how you would like to finish the dessert. You can see in the pictures what I did with it.
